Before I give the recipe, THELMA, I know you don't eat pork but you could use this for chicken and Rich said you eat that! Hope everyone enjoys it!

"This is a tried and true recipe I have had for years." The marinade is a bit sassy and is a perfect partner for Fess Parker Merlot"  Of course we didn't have his so we used a merlot we had on hand! "Serve with wild rice and mushrooms, baby carrots, and an organic mixed green salad garnished with grapefruit and avocado slices."

We made the salad and it was OUTSTANDING! We put balsamic vinegar on for the dressing!

SPANISH PORK ROAST

2-3 pound pork roast
5 cloves garlic
2 pinches oregano
1/2 teas cumin
dash cayenne pepper
1/2 cup red wine vinegar
salt and pepper to taste

Combine everything but the pork roast in a small bowl. Pour over the pork roast, and let marinate for 2 hours , basting intermittently ( the roast can even marinate overnight). Place in a roasting pan and bake at 300 degrees for 2 1/2- 3 hours, or til done. Serves 4
